Dare I Say? Disappointed in Ina.

Caramel is my absolute favorite flavor, especially this time of year!

This morning, I drank one of these: Grande Caramel Macchiato.


And as I write this post, I'm burning this: Laudree Salted Caramel Candle.


And during the middle of my day, I attempted to make these: Barefoot Contessa Fleur de Sel Caramels.


I tried this recipe last year for the first time, but blamed my fail on the lack of using a candy thermometer. And today, with my Williams-Sonoma candy thermometer in hand, I was ready again. And, once again, my Fleur De Sel Caramels didn't look quite like that, but more like this...


Dear Ina,
How come every recipe I make of yours works PERFECTLY, except this one? The one for my favorite candy in the world! I've tried twice and have failed. Please let me know what I'm doing wrong because all I want is a Fleur De Sel Caramel!

Ellen and Jeff

ELLA loves weddings! So, today I'll share my own modern-day love story. We'll start with the best day of our lives... 9/17/11,Take a peek!

Our first date ... Tribeca Grill, New York City

Jeff and I met through our mutual friends, Ryan and Lauren. Jeff, Ryan and Lauren attended Middlebury College together in Vermont, and Lauren has been a close friend of mine in the city.

Prior to Jeff asking me out to dinner, we had several missed connections for our friends to formally introduce us. In the end, Jeff and I met for the first time on a blind date at the Tribeca Grill in New York City.

As I walked inside the trendy, downtown restaurant, I immediately saw Jeff waiting at the chic bar. He looked my way. We both smiled.

Dinner was delicious. And, after almost three hours, we realized we were among the last few in the restaurant. The waiter had subtly encouraged us to leave, so Jeff suggested we go across the street to one of his favorite spots for a glass of wine. We walked down the block to Smith and Mills, which I soon realized was a hidden gem in the city.

As the evening ended, Jeff and I concluded that our blind date was a success. We both laughed and said we needed to thank Ryan and Lauren for the introduction. We’ve been all smiles since!  Thanks, Ryan and Lauren!


The Proposal ... November 24, 2010

In early 2010, Jeff moved from New York City to Calgary, to work with his father at RII NA. For a long-distance relationship, we’re fortunate to see each other about every two weeks, but certainly have logged extensive airline miles. Needless to say, airports have become a significant part of our relationship!

Jeff and I spent Thanksgiving in Calgary this year. The flight from New York is about 5 hours, so I always try and leave first thing in the morning. Both Jeff and I are now very used to 7 a.m. flights! 

Rushing off the plane, I raced through customs and entered the Arrivals section of the airport (one of the happiest places I believe exists, being greeted by the ones you love).

I saw Jeff and ran to say hello! I immediately started talking about how excited I was to be in Calgary and how beautiful the mountains were from the sky! Jeff slowly interrupted me and handed me a present, like he always does when he greets me at the airport. Usually, it's a box of Bernard Callebaut truffles! However, this time was different.

Inside the gift bag, I pulled out the most beautiful, gold foil box. Hidden beneath the brown satin bow, I noticed a small sticker with the Brinkhaus logo, a famous Canadian jeweler. “Is this really what I think it is?” I thought to myself.

As I continued to gaze at the box, Jeff nudged me to untie the wrapping. My heart was racing with excitement. We held hands as I pulled out the small, black velvet box inside.

After the most heart-touching proposal, Jeff slid the stunning, diamond ring onto my finger. By this point, my eyes were filled with tears, and I jumped into his arms saying “YES”! We spent the rest of the day celebrating with family and calling close friends to share our great news! This is surely a day we both will never forget!

Fa, la, la, la, la...

I seem to fall in love with the holidays a little more each year. And, this December is even more special, because it's the first Christmas Jeff and I will spend as newlyweds!

We found the perfect Fraser Fir. And tonight, we'll sip wine and trim this gorgeous evergreen. Can it get any better?

December Darling

December Darling

December is my second favorite month, behind October. Decorations, Christmas cookies, Holiday parties, what's not to love? But when the first snowflakes fall, I seem to always ponder... What am I going to wear?


I've reached the point in my life where I'm not going to be cold anymore. When I was younger, I sacrificed warmth for style. But, after spending the last five winters in New York City, I've changed my ways.


My go-to casual, December staples now include: skinny jeans, winter white blouses, booties and accessories. Pair that with a wool peacoat or swap knee-high boots for booties, and you're set.

"Wow, That's Good Bread"

Very rarely does a recipe conjure up the same reactions from every eater. And, if I had a penny for every time I've heard, "wow, that's good bread," I'd be rich! 


My sister, Annie, lives in Vermont. I remember laughing two years ago when she told me to try her new specialty: no-knead bread. Note, this is the same sister that makes her own yogurt. "Who has time to make bread, I thought to myself. Especially in New York City?" She came back with, "This is Sullivan Street Bakery's recipe!" (a.k.a. my favorite place for doughy-goodness in the city). While funny, I still wasn't convinced. 


Okay, fast forward several months... At first bite, I was in love. The only thing I could say was, "wow, that's good bread!" 


So, without further ado... 


"Wow, That's Good Bread"
6 to 8 Quart Pot with Lid (Pyrex Glass or Le Creuset)
3 Cups Bread Flour (white or wheat)
1 1/2 Cups Water
1/4 Teaspoon Yeast
1 1/4 Teaspoon Salt
Olive Oil (for coating)



Mix all of the dry ingredients in a medium bowl. 






Add water and incorporate by hand or with a wooden spoon for 30 seconds to 1 minute. The dough will be very loose. 





Lightly coat the inside of a second medium bowl with olive oil and place the dough in the bowl. Cover tightly with plastic wrap and let the dough rest for 12 hours at room temperature. 


After 12 hours, the dough will look like this...




Remove the dough from the bowl and fold once or twice to loosen the air bubbles. Put the dough back into the bowl and cover with a cotton towel for 1 hour.  


Preheat the oven to 400 degrees with the pot inside the oven (the pot must be hot prior to baking the dough). Put the dough inside the warmed pot and cover with the lid. 




Bake, with the lid on, for 30 minutes. Remove the lid and bake for an additional 15 minutes, until the loaf is browned. 




And that's it, the easiest, most delicious bread! Enjoy!
